In October, our farmers' market sells lovely fried apple fritters that I look forward to every year. Inspired by this autumnal treat, I made Apple Cider Doughnuts this weekend. An old friend from out of town was visiting with her kids, so I thought it was the perfect opportunity to test out this recipe.
Because, really, what kid doesn't love doughnuts?
Apple Cider Doughnuts, Recipe from Food Loves Writing
1 cup apple cider
1 cup sugar
1/4 cup butter (softened)
2 large eggs
1/2 cup buttermilk
3.5-4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
Vegetable oil for frying (I used a whole bottle)
1 cup cinnamon and sugar, mixed
Boil apple cider until it reduces to about a quarter cup in size. Cool completely.
In a large bowl, beat the sugar with the butter until smooth. Beat in the eggs. Add the buttermilk and reduced apple cider.
In another bowl, mix together the remaining dry ingredients: flour, baking powder, baking soda, cinnamon, salt and nutmeg.
Gradually, add the flour mixture to the liquid mixture, and mix enough to combine. Dough should not be sticky, and you will need to roll it out like cookie or pie dough. I started with 3.5 cups and then added more to make it the right consistency. Transfer the dough to a floured board and knead slightly to combine well without over working the dough.
Roll or pat the dough to a 1/2-inch thickness. Use your hands to create small balls of dough—about 1.5-inches in diameter. (I started off making them bigger—huge, actually!—but they burned in the oil and the middles came out raw. So I had to go smaller.)
Place these doughnuts, a few at a time, into a deep pan that’s been filled and heated with enough oil to fill it approximately three inches deep. Or use a deep fryer like I did.
Fry a few doughnuts at a time, turning once or twice until they are browned and fully cooked through. Allow the hot doughnuts to drain on some paper towel. While the doughnuts are still warm, coat them in the cinnamon-sugar mixture.

No place around here has vegan apple cider doughnuts...and I have been so busy baking other things that I haven't let myself make them. I want an apple cider doughnut SO FREAKING BAD! But they are so fattening! Dangit! I'm going to go pretend I never read this...LOL.
