Fall Recipes: Applesauce in the Crock Pot

applesauceGot a lot of apples lying around? One of my favorite things to make in the fall is homemade applesauce. It's so easy to do in the crock pot, and it makes your whole house smell like autumn deliciousness.

My favorite way to eat homemade applesauce? Warm and on top of vanilla ice cream! Yum!

We like our applesauce really zesty and spicy-warm, so I add lemon and lots of cinnamon. If your kids like blander, sweeter applesauce, then add a bit more sugar, reduce the cinnamon, and omit the nutmeg and coriander.

Applesauce in the Crock Pot

4 lbs of apples (I used about 9-10 large ones)

1 lemon (juice and about 1/4 of the peel)

2 tablespoons brown sugar

1 cinnamon stick

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground coriander

1/3 cup water

Peel, core, and slice apples. Toss in juice of one lemon to keep from turning brown. Add apples and water to crock pot. Add sugar, cinnamon stick, ground cinnamon, nutmeg, coriander, and lemon peel. Cook on low for 8-10 hours or on high for 6. Remove cinnamon stick and lemon peel. Blend in small batches if you prefer smoother applesauce.

I love making applesauce in the crockpot!!!  It freezes well too, if you dont mind blending it smooth when you thaw it.

mmmm... no but maybe I will now! My favorite thing to make this time of year either makes people go "ew gross!" or go "give me some!" but here it is... lol.

I make apple pie filling. and then.. we eat it. Screw baking a pie! haha. I slice up 4 granny smiths, toss them in 2 tbsp brown sugar and 1 tbsp white cane sugar, 2 tbsp butter, and add in 1/4 cup chopped walnuts.. sprinkle in some cinnamon.. tada!  I saute them for 5-10 minutes until they are firm but cooked through and we eat it over ice cream or on top of our steel cut oats.. its so good! Its a wicked little fall treat that I cant get enough of!

OMG, that sounds so good, LuminousMom! Plus, a good idea for me since I can't stand to make pie crust. I'm definitely going to try it this weekend. :)
