I love cranberries, but I know lots of people—particularly kids—can't handle the sourness. Still, with the right amount of sugar, I think this tart 'n' tasty fruit has potential to be more than a tired Thanksgiving side or a forgotten muffin. Happy One Pot Wednesday!
Today I'm sharing a one pot recipe that we make often in our house: Tortilla Soup! The original recipe is from Epicurious.com, but I like to add a few handfuls of frozen corn during the cooking process, as well as top with sliced avocado and shredded cheese. It's got tons of flavor without being too spicy. Serve with a salad and you're good to go. Enjoy!

Happy One-Pot Wednesday!
We eat a lot of sweet potatoes in my house because they're high in Vitamin A, Vitamin C, and fiber. Plus, yams taste great because they're naturally sweet! We'll be trying this easy recipe for one-pot Garlic Pot Roast and Sweet Potatoes from Betty Crocker. Just combine ingredients in the crock pot and leave it to cook all day.
