This isn't the first time I'm written about my love affair with leftovers. In my house, we always have food leftover from dinner; often, Mr. Cafe Kim and I will use it to make sandwiches for lunch the next day.
Can I tell you a secret? I actually prefer food on the second day—the flavors are so much more intense! Here are some of our favorite meals-turned-into-sandwiches:

I'm originally from Massachusetts, where today, a legislative committee is deciding what the state's official sandwich will be. Up for consideration? The Fluffernutter! For those of you not familiar with it, this beloved sandwich consists of marshmallow Fluff and peanut butter (sans the crust for picky eaters). Californian Erin Zimmer of Serious Eats says if her state had a sandwich it would probably be avocado and sprouts on seven grain bread.

Do you use MealPayPlus? It's a Web-based payment program that allows parents to pre-pay for school lunches and view their kids' purchases online or by phone. Some schools have been doing it for a few years; others are just signing on now because of the program's many advantages...

I'm determined to break my son out of the brown bag doldrums next year, and luckily CafeMom rkoloms is several steps ahead of me. The mom of future 9th grader Alyssa has been collecting ideas, and since the Daily Buzz is headfirst into our Back to School Guide, she's offered to share them.
They are all vegetarian -- great for moms who are raising their children that way and for moms like me who just want to mix it up a bit.
rkoloms has been passionate about nutrition and children since becoming pregnant with her daughter in 1994, though she was a vegetarian before then. She's involved in several vegetarian and healthy parenting groups here on CafeMom to "get some good nutritional information out into mainstream America" and do her part to extinguish childhood obesity.
