Happy One Pot Wednesday!
Today I'm sharing a one pot recipe that we make often in our house: Tortilla Soup! The original recipe is from Epicurious.com, but I like to add a few handfuls of frozen corn during the cooking process, as well as top with sliced avocado and shredded cheese. It's got tons of flavor without being too spicy. Serve with a salad and you're good to go. Enjoy!

Happy One-Pot Wednesday!
We eat a lot of sweet potatoes in my house because they're high in Vitamin A, Vitamin C, and fiber. Plus, yams taste great because they're naturally sweet! We'll be trying this easy recipe for one-pot Garlic Pot Roast and Sweet Potatoes from Betty Crocker. Just combine ingredients in the crock pot and leave it to cook all day.

Got a lot of apples lying around? One of my favorite things to make in the fall is homemade applesauce. It's so easy to do in the crock pot, and it makes your whole house smell like autumn deliciousness.
My favorite way to eat homemade applesauce? Warm and on top of vanilla ice cream! Yum!

Happy One-Pot Wednesday!
There's a brand new crock pot group here on CafeMom called I ♥ My Crock Pot! (cute name, don't you think?). I heart the great crock pot recipes I've already found in there, including this one for Beef Stew With Dumplings from Sstepph. It's a perfect one-pot meal, especially now that they weather's getting colder. Just let it slow cook all day long while you're at work or out with the kids.

It never occurred to me that homemade macaroni and cheese could be a one-pot meal because I always assumed you needed a pre-boil (and, thus, two separate pans) step. Silly me. White on Rice Couple has found a way!

The Amatuer Gourmet claims this is a tuna casserole recipe—but I don't buy it. There's no cream of chicken soup, no cheese bubbling in the oven. In fact, there's not even a casserole dish! Still, it's a really tasty, really easy pasta with tuna dish. Plus, it's one-pot. So no complaining!
