CafeMom TonyaLea's one-year-old Kaiya has officially entered the "picky eater" stage. So this mom recently found a protein packed breakfast that allows her to hide the meat and veggies: Mini Breakfast Frittatas.
"She can also eat this without me having to cut it into pieces, which is great for her because she is all about independence now," says TonyaLea, the new owner of the Cooking for Toddlers group. "I also like that you can tailor the ingredients based on what you have handy, and that you can vary the ingredients for multiple children if you have them."
Cooking for Toddlers is a great group to join if you have a picky eater, too. Members offer each other moral support and share stories, ideas and advice to get kids to eat healthy. Like Toddler Meals here, the group features gads of recipes that are easy to make and tot approved.
"We also aim to provide a resource to moms ranging from those with babies just starting finger foods to those with older toddlers that are looking for new ideas," TonyaLea says.
How to make the recipe ...
Mini Breakfast Frittatas (from Disney Family Fun)
Prep time:
Cook time:
You'll need:
4 large eggs
1/4 cup half-and-half
1/2 teaspoon salt
Assorted mixins (such as shredded cheese, diced vegetables, and cooked and chopped bacon, ham, or sausage)
Grated Parmesan cheese (optional)
Make it:
1. Heat your oven to 350° F and coat a 6-cup muffin pan with nonstick oil.
2. Whisk together the eggs, half-and-half, and salt in a medium bowl; then evenly distribute the egg mixture among the muffin cups.
3. Add about 2 tablespoons of mixins to each cup, then sprinkle on a bit of Parmesan cheese, if you like.
4. Bake the frittatas until they are puffy and the edges are golden brown, about 20 to 25 minutes. (If necessary, run a butter knife around the edge of each one to loosen them before removing them from the pan.) Makes 6 mini frittatas.

Yum that sounds so good. I always want to make frittatas, but it would make so much more than I need.
That'll be a great breakfast served with fruit and milk.
That doesn't sound very healthy, maybe skip the salt, bacon/sausage, and half-and-half and use regular milk or milk substitue instead.
