What's your recipe for potato soup?

I would like to make a big thing of potato soup for sunday. There are so many different ways to make it. I am looking for some ideas that have worked for you. I know that there are some wonderful cooks out there. My family likes the kind with cheese and bacon and really creamy. Thanks

  • I make it more than one way myself. Sometimes, I just boil the potatoes, add some milk, butter, onion, seasonings (vary depending on my mood) and mash the potatoes up a bit. Other times, I make it like baked potatoes, and add the milk and butter and then sour cream, bacon, cheddar cheese. This week I boiled the potatoes in just enough chicken broth to cover them, then added just a smal splash of milk, salt, pepper, garlic, a little cheese (leftover from tacos) and a few bacon bits. It was pretty good.

  • My version of loaded baked potato soup
    4-6 large baking potatoes
    1 large yellow onion
    1 package sliced bacon (any flavor you like)
    3 tbsp. butter
    3 tbsp. flour
    3 oz. sour cream
    1 c. shredded cheddar cheese
    3 c. whole milk
    salt, pepper, garlic powder, onion powder, red pepper if you like heat, just a pinch of each or to your taste.
    green onion or chives for garnish
    wash and prick the potatos, bake at 350 for 40 min.
    while they are baking, get out your soup pot, over med heat, add your bacon sliced and diced, add your chopped onion, sautee until cooked through, add the butter and flour, mix it all together, whisk in the milk, bring it up to a simmer, if it is too thick add a little more milk, add the seasonings, cheese, sour cream, take the potatoes out of the oven and chop them into bite size pieces add to the soup, top with garnish and enjoy....

  • My favorite potato soup recipe: 6 pared and diced potatoes, one chopped onion, boiled until tender in water to cover. Do not drain. Mash with a hand masher. Add one 8 ounce pkg. cream cheese, 2 cans cream of celery soup, salt and pepper to taste and enough milk to make the soup the consistency that you like. Yummy!!!! You can add the cheese, bacon, green onions or whatever you like. It's a really creamy soup.

    * 8 potatoes, peeled and cubed
    * 1/2 cup butter
    * 1/2 cup all-purpose flour
    * 8 cups milk
    * 1/4 cup chopped onion
    * 1 (8 ounce) container sour cream
    * 1/2 cup shredded Cheddar cheese
    * salt and pepper to taste
    1. Place cubed potatoes into a glass dish, and cook in the microwave oven for 7 to 10 minutes, or until soft.
    2. While the potatoes are cooking, melt the butter in a large pot over medium-high heat. Whisk in flour until smooth, then gradually stir in the milk. Bring to a boil, then reduce heat to medium, and simmer for 5 to 10 minutes, or until slightly thickened.
    3. Stir in the potatoes and onion, and cook for 5 more minutes. Stir in the sour cream and Cheddar cheese until melted and well blended. Season with salt and pepper.
