How do you make beef quesadillas?

Do you use ground beef or fajita meat?

  • I purchase steak already cut for stir-fry (if not available I purchase round steak or something cheap and tenderize/slice lengthwise)
    I brown the steak in a lil oil for about 2-3 mintues on each side. Then I add canned tomatoes with jalapenos/green chiles. (this is optional) After I heat on low for about 10 mins. I use another frying pan and coat with oil. I take flour tortillas and spoon beef mixture onto one side then sprinkle with shredded cheddar cheese- fold over place in pan and let brown and then flip and let brown on the other side. Repeat.

  • You can use either, though for quesadillas I prefer a steak cut, rather than ground. I like the meat grilled, but sauteeing over high heat would work too once it was sliced thinly. Of course, if you're grilling, slice afterwards. Here's what I usually do...
    Get a nice, trimmed piece of sirloin, flatiron, or skirt steak. Mix olive or avocado oil with the juice and zest of a lime and an orange, some cilantro, some shallots, and some garlic. Marinate the meat for 30 min at room temp, then immediately put on a hot grill. When first side has a nice char on it, flip and grill for 3-4 more minutes (depending on thickness). Remove from grill and let rest 15 minutes, then slice thinly. Use for quesadillas, fajitas, tacos, whatever.

  • You can use either. If you use ground beef it's more like a cheeseburger quesidilla, if you want restaurant style you would go steak.
