What are some healthy, vegan recipes?

I'm the vegan mommy of a houseful of kids, and I just started working part-time outside the home. I need ideas for quick vegan meals, or casseroles and whatnot that I can make ahead of time and instruct the hubby and kids to bake. Oh, and I have a crockpot. I'm just sick of all of my old standbys - I want something new, quick, cheap and easy!

  • Well, I don't think the question above was the answer that you where hoping for so I will try to do my best to help. I like the "extra firm" tofu-Put diced tofu in a hot pan with cornola oil. once one side is fully cooked you will then flip. After tofu is cooked, you will add your thin sliced carrots, snow peas, peanuts (salted or not) water chestnuts & whatever other veggies you want to add (room for 2 more) then you will add a small amount of your stir fry sauce (pick one of your fav.) Don't put too much because you don't want to drown out the taste of this wonderful dish. My family LOVES it & our neighbors want to know when we are going to make it again!   • Why all the hate?? I don't get it!! A well balance diet, doesn't need meat.... I myself am NOT vegan, but there is a dish that I do make for my family that we all like here. I don't know if it would be consider "vegan" or not; but it's simple enough. I make home-made bean and rice burritos.

    Ingredients makes 10 burritos: 1 package of flour tortilla shells (10 shells); 1 box of dirty rice; 1 can of re-fried beans. Make the dirty rice according to the box, instead of using hamburger use the re-fried beans as the substitute.. Use the beans and rice to fill the 10 tortilla shells and bake in the oven for 20-30 minutes. Serve with salad on the side.

  • Here are 2 recipes I just got from a friend,

    biscuits and gravy:
    2 cups flour, 1 TBS baking powder, 1 tsp salt, 3/4 cup soy milk, 1/2 cup shortening
    combing dry ingredients, cut in shortening, add soy milk until dough forms and is soft and easy to handle. Pad dough out on flat surface to 1 in. thick. Cut with biscuit cutter or cup. Bake 450 for 10 min.

    1/2 cup oil, 1/2 cup flour, 1 cup milk, 1 cup vegetable broth, 1 tsp salt, 1 tsp pepper, 1 tsp sage, 1 pkg Morning Star farms sausage crumbles.

    Wisk together flour and oil in sauce pan, add spices cook over med heat until bubbling. Remove from heat, add milk and broth. Heat until thickened stirring constantly, add sausage and heat through.

  • vegetarian chili (more like a stew, she made it for us with carrots and no beans) I tried to modify the recipe some when I wrote it down because it called for dry beans which is too much work for me.

    1 can kidney beans, 1 TBS olive oil, 1 med. red onion- chopped, 2 cloves garlic - minced, 2 green pepper- chopped, 1 lb sweet potato- chopped (microwave to soften), 1 1/2 tsp chili powder, 1 tsp salt, 3/4 tsp cinnemon, 3/4 tsp corriander, 3/4 tsp cumin, 2 cans no salt added tomato sauce, 1 pkg (10 oz) frozen spinach, 1 pkg (10 oz) frozen corn

    saute onion and garlic in oil, add pepper cook 5 min. until tender. Stir in sweet potato spices, tomato sauce, and 1 cup water. Bring to a boil. Reduce heat cover and simmer 20 min. Stir in spinach and beans, return to boil, simmer again until sweet potatoes are tender. Add corn and cook 5 more minutes.

  • we do black beans with mixed peppers over brown rice and lots of spices yum yum is quick. Also lots of stir frys... with tofu. I love portabello mushrooms, grill it just like steak with steak spices with some olive oil and sides of asparagus, maybe potatoes, some sea salt, basil from the garden. message me for some more if you want!
