  • I get my Chicken & lay it in a casserole dish. Glaze your chicken with a little mayo (helps heep it moist/salt & pepper if desired) & then drizzle it with your favorite italian dressing. ( I LOVE Newmans) bake your chicken at 350 degrees until fully cooked. If you want you can add white or brown rice & its yummie!

  • 1 stick of butter, 4 chicken breasts and package of italian seasoning in crock pot on low. 4 hrs if thawed 8 if frozen

1 hr before serving shred chicken and put back in pot with 1 can cream of chicken soup and 1 package of cream cheese.

Prepare one box bowtie pasta, drain and add to crock pot. Serve.

  • I love making these.. I chop chicken breast into small pieces, fry them up with water chestnuts (2 small cans), chinese stir fry seasonings (the ones in the little packets, whichever one you want), and hoisen sauce. I make a side sauce of soy, rice vinegar, and red chili flakes. I serve the chicken in lettuce leaves, put sauce on them and make little wraps.. So yummy.

  • Slice it through the middle so that it opens like a book, and pound it to even out the thickness. Dredge in flour, seasoned with salt & pepper, then dip in an egg/milk wash, then dredge in the flour again. Heat oil & butter (the oil raises the smoke point of the butter so it doesn't burn) in a large skillet and brown the chicken on both sides. From here you can do any number of things: make chicken fried chicken by using the pan drippings to make a cream gravy, seasoned with lots of black pepper. Or add spaghetti sauce and mozzarella, and bake until the cheese is gooey. Or make a pan sauce with chicken broth, onions or shallots, sage, and a splash of cream: simmer until it thickens slightly. Top each chicken piece (you can cut them in halves to make them more manageable) with provolone cheese (and proscuitto if you have it) and pour the sauce over, then bake until the cheese melts.

  • You can also get a box of Tempura mix, make the batter, adding salt and white pepper. Cut the breasts (raw) into strips, dip into the batter, and fry. Serve with a variety of sauces...we usually do sweet & sour, soy sauce, noc chuam, and bbq.

Or make a stir-fry: cut the chicken into thin strips, add soy sauce, hoisin sauce, and oyster sauce in equal measures. Let marinate 20 min, then quickly stir fry. Remove from pan/wok, and stir fry veggies. Serve with rice.

  • When I do not have a lot of time to cook, I'll get a box or two of the regular wild rice rice-a-roni, saute the rice and then put it in a baking dish ~ layer frozen chopped spinach on top of the rice ~ lay the chicken on top of that sprinkle the chicken with a little garlic, salt, pepper and some thyme or tarragon. Put in the hot water (whatever the box says for the rice-a-roni) cover with foil and let it bake for about an hour at 350 then remove the foil and let it bake another 15 minutes or so. With a green salad and french bread dinner is done. :)

  • slice the chicken horizontally. Fill the pocket with diced tomatoes, crumbled bacon & shreded mozzorela cheese. Stick some wooden toothpicks in the chicken to hold it together. Season with salt & pepper. Bake it in a 375 degree oven for 25-30 mins. Serve with twice baked potatoes & green beans!! YUMMY!!

  • i love this recipe, with or without the sauce:
dredge chicken in flour, and lots of herb mixture (i use whatever herbs i like, usually an italian mix). fry in a little olive oil until almost all the way cooked. remove from pan. in that pan, add 1/2c white wine, anywhere from 2T to just under a 1/4c balsamic vinegar, and 1/2 a seasoning packet (i use an italian salad dressing mix, or those lipton veg. soup packets, or grill time marinade mix in garlic and herb). cook on ~med to simmer for about 5 minutes until it reduces, stirring to get up all the bits from the bottom. add the chicken back in and cook for another couple minutes, turning once. serve on a plate with a little sauce drizzled on top. yuuummmm!
