  • Scrambled, fried, hard boiled. You could do an egg cassarole. We just scramble up the eggs, season them to taste, add whatever veggies and/or cheese or meats we have laying around and want to throw in there, and pop it in the oven for about 20 minutes until the eggs are all the way cooked. I usually use a pie pan but just use whatever size pan your eggs fit into. I like it to be about an inch thick. This can be prepared the night before (or earlier in the day if eating for dinner) and just wrapped in plastic in the fridge. Then when it comes time for dinner, simply pop it in the oven.

  • When I'm in a hurry I season them w/ some garlic salt and pepper and then when they are almost done I poor Teriyaki sauce over them. Or they have all kinds of marinades in the salad dressing isles. My fave marinade is this lime tequila garlic one.

  • When I don't really know what to do and I need a quick chicken meal I just cover the chicken with italian salad dressing and bake it.

  • you could make chicken and dumplings. its not a quick meal but its simple to make. You just boil chicken legs and thighs in water with what ever seasonings you like. once the chicken is cooked use tongs to take it out of the water. let it cool and take the chicken off the bone. then mix flour salt pepper and water together in a bowl so that it makes a moist dough. Put the deboned chicken back in the water you cooked it in and spoon in the dough to make dumplings. just cook about 20 to 30 minutes more stirring occasionally. its great tasting and you dont have to do much. it just takes a while to cook. and younger kids can eat it too.
