What are vegetarian dishes I could cook for Thanksgiving?

What do vegetarians and/or vegans eat on Thanksgiving? My brother is one (I'm really not sure if he's completely vegan or not, sorry), and, though I am not making Thanksgiving dinner this year for him and my family, I'd like to next year. Could you please give me some great ideas for what I can serve to him (other than mashed potatoes)? I've never eaten tofu, so I don't know how to cook it, so if you're going to suggest it, please include some sort of directions?

  • My sister always cooks Tofurkey! LOL. I have no idea how to make it. I would search it on the internet. You can always ask him what he would like. Maybe he would like Salmon (if he eats fish) or maybe he would be fine with all of the veggies.

  • My sister in law is a vegetarian and when she comes over on Thanksgiving, she usually has some dressing, mashed potatoes, green beans, and whatever other veggies I've made (it varies). She also brings the cranberry sauce, which her and I both favor :) Between that and the noshes, she's satisfied and doesn't even miss the turkey!

  • I'm vegetarian and I NEVER expect anyone to make different food for me -- especially if it's something like Thanksgiving dinner, there are so many side dishes to choose from! sweet potatoes and green beans -- cranberries. YUM! I don't worry about protein, it's a day to just eat what you want!
