What are some ideas for quick and easy dinners for working moms?

Any ideas. There are evenings that my family and I do not get home till 6:30-7pm at night. I need a quick 30min to 45min idea. I hate having my family eat so late and making frozen quick dinners all the time. I do love to cook. Just not after waking up 5:30am, drivng hour to work, and hour home and not getting home till late. Ideas please, I am sure other may benefit as well!

  • I make big batches of soup on the weekends and then freeze them for when I don't have time to cook. Serve with a nice salad or grilled cheese sandwiches and you have an instant dinner.

  • I agree - soup in winter is also awesome..I love veggie soup. My boyfriend makes a big batch and we eat every evening.

  • homemade chili...you can make it the night before & then just reheat it. when i was pregnant & working we made crockpot meals ALOT. its so nice to come home & dinner just be sitting there waiting for you haha. also, there are some great pasta box meals...i think theyre called suddenly salad...we eat them warm w/ crab meat. it takes about 15 mins

  • I feel your pain! I need to have dinner on the table in 20 minutes most nights; I try to make sure tht we all get our recommended servings of whole grains, fruits and veggies. I make a big batch of brown rice in my rice cooker; the rice gets frozen in wax bags in a big zipper bag; the wax bag can safely go in the microwave and back in the freezer for the next batch. At least twice a week we have a stir fry (frozen veggies, tofu, some kind of sauce (Indian, Korean, etc.), over rice). Another quick meal: boil whole wheat pasta shells, drain and return to pot; add cannelli beans (canned or home cooked); frozen, chopped spinach; ricotta, tofu, or a combo; marinara sauce (jarred or home cooked); serve in a bowl with a sprinkle of mozarella. I make bean and veggie stew in the crockpot once a week.

  • Any thing in the crockpot or try this recipe. Boil any pasta you like. In a pan put in a little olive oil saute onions,peppers and any other vegetable. Then add a little soy sauce if too salty add a liitte sugar. Then pou it over your pasta. My son just loves this dish.

  • mashed potatoes which you can make the night before and keep in the freezer or refridgerator and then warm up and serve with fish fingers for the kiddies, fish for the adults, peas, sweetcorn and parsley sauce. it makes a gorgeous meal and would take around 40 mins to do.
