What can you do with leftover Thanksgiving turkey?

I was wondering what you guys do with your left over turkey? Any recipes? Or just the sandwich route?

  • We just eat it. The way we cook the leftovers last a few days. It usually all runs out at the same time. Otherwise my husband, dad and son eat it on bread.
My mom once made turkey and dumpling soup and it was so good but I never got her to write down the recipe (which I think she just made up as she went).

  • I make a casserole with the left over turkey and stuffing that's soooo yummy. You put your left over turnkey in the bottom of a baking dish, break up any pieces that are larger then bite size. Then spread out a layer of cambell's cream of celery soup over the turkey, I use 2 cans for a 9x13 dish. Then spread the left over stuffing evenly over the soup.
Pop it in the oven @350 for about 30-40 minutes, or until you can see the soup bubbling around the edges of the stuffing.
I think my family loves this meal even more than the turkey dinner. If you don't like celery, you can use any of the cream of (blank) soups.
