  • haha, I usually buy from the store but I'd like to impress my family (who all know I'm a terrible cook) this Christmas. haha
Plus, "cooking' something delicious makes me feel a bit more "housewife". LOL
...I'm a terrible cook and cleaner so any bit of housewefe-ness helps!
    hehe

  • 16 graham cracker squares (8 whole crackers), crushed

1/4 cup ground pecans or walnuts, optional

    3 tablespoons melted butter

1 8-ounce package cream cheese, at room temperature

    1 cup ricotta cheese

2 tablespoons honey, or to taste

Rind of a lemon, freshly grated

    Pinch salt

    About 1 1/2 cups blueberries.

    1. Combine crushed graham crackers, nuts if using, and melted butter. Press evenly into bottom of an 8- or 9-inch square pan (glass is good) to form a crust about 1/4-inch thick. Put in refrigerator until ready to use.

    2. Using a standing or hand mixer, or a whisk, combine cream cheese, ricotta, honey, lemon rind and salt, and blend until smooth.

    3. Spread cheese mixture carefully and evenly over crust, using a spatula or butter knife to smooth top. Cover with fresh blueberries and chill for at least an hour

  • Cont....
    Preparation:
In large microwave safe bowl, combine sugars and corn syrup and mix well. Microwave on high for 2 minutes; meanwhile, rinse the spoon off with very hot water. Remove bowl from microwave and stir mixture, scraping down sides of bowl. Return to microwave and microwave on high for another 2 minutes, or until mixture begins to bubble and boil. Again, rinse that spoon!
Remove from microwave and add 1-1/2 cups peanut butter. Stir until mixture is smooth and combined. Add cereal and stir to coat. Pour and press into greased 13x9" pan, using back of greased spoon to press evenly. Combine chocolate chips and 1/3 cup peanut butter in small microwave safe bowl. Heat on medium power for 2 minutes; remove and stir. Return to microwave for another 30 seconds if necessary to melt chips. Stir until smooth, then spread over cereal mixture. Let cool completely, then cut into bars. Store, covered, at room temperature
