Do you have any good one-pot recipes?

  • I make beef or chicken soup with barely and mixed veggies and curry powder with onions, peppers, garlic i make a big pot and freeze some and when i'm ready to eat.. i just warm up.

  • stir fry is always a good one. I buy a frozen veggie mix that's specifically for stir fry, a stir fry seasoning packet, veggie meat (you could obviously use the real thing if you're not vegetarian), and let it steam away. Super quick and easy.

  • anything I can throw in the crock pot before leaving for work... when we buy hamburger we brown the whole package then divide it into freezer bags.. throw it in the pot to make chili, or w/ spag sauce if we want italian... frozen meatballs are also good for this.
    pork roast w/ potatos and carrots (i like sweet potatoes in mine), bottom round steak w/ potatos is also good in the crockpot (since it's a cheaper cut of meat it has to slow cook but it comes out like a roast) sliced ham w/ canned pineapple chunks, broccoli, and carrots are also good together.
    we're big crock pot fans, can't you tell :-)
    oh, yeah, chicken stew (we shred leftover baked or roasted chicken) w/ a can of broth or a jar of gravy, couple cans of mixed vegs, make biscuits when I get home. Kids really like that one!

    However....I do create my own "skillets" is one my kids love!!
    1 pound browned hamburger, drained and returned to skillet, add 1 can refried beans, 1 chopped onion and a jar of salsa....simmer ......meanwhile cut a 12 to 16 once package of flour tortillas...into 1 inche sqaures...add to skillet mixture, with a can of corn and a pkg. of shreded cheddar cheese, plus a !/2 cup sour cream. simmer 5 to 10 mintes
