i got a chunk of parmesan cheese by mistake and now i don't know what to do with it! i don't want it to go to waste, so does anyone know of an easy recipe that calls for an excessive amount of parm?

Parmesan Chicken Breasts
1 cup shredded  Prmesan
1 cup seasoned bread crumbs
4 chicken breast-bone in or boneless
1 stick melted butter or margarine
Preheat oven to 350. Mix the 1 cup parmesan and bread crumbs together . Dip breasts in butter then in crumb mixture. Place in baking pan. Drizzle with any leftover butter. Bake 25-35 minutes, then sprinkle with more parmesan, return to oven and cook another 5-10 minutes or till golden brown.

Just about any casserole could use some grated parmesan on top, especially anything Italian like lasagna, baked spaghetti. Also wonderful add to salads.

Parmesan cheese will keep a long time. Store it in a plastic aip-lock bag and everytime you use it-put it in a fresh zip-lock bag..it keeps practically forever. It can also be frozen.
