Quick Casseroles

Hamburger Stroganoff

1 lb hamburger
1 onion
16 oz package wide egg noodles, prepared and drained
8 oz carton sour cream
1 can cream of mushroom soup
6 oz can mushrooms, drained
1 Tbsp garlic powder
1 tsp salt
1 tsp pepper

Brown hamburger and onion together; brown.  Add other ingredients in large pot, heat through for 20-30 minutes over medium heat.


1 lb hamburger

16 oz pkg elbow macaroni, prepared and drained
28 oz can diced tomatoes
2 c. tomato juice
1 tbsp garlic powder
1 tsp salt
1 tsp pepper

Brown hamburger with onion and green pepper, drain.  Add to other ingredients in large pot.  Heat through 20-30 minutes.  *Optional--I like to serve with shredded cheese (either cheddar or mozzarella) served on top while it's hot!

Bruchetta Chicken Bake

14 1/2 oz can diced tomatoes
1 pkg chicken flavored stuffing mix
1/2 c water
2 cloves garlic, minced
1 1/2 lbs boneless, skinless chicken breasts cut into bite sized pieces
1 tsp dried basil
1 c shredded mozzarella

Preheat oven to 400 degrees.  Place tomatoes with their liquid in medium bowl.  Add stuffing mix, water, and garlic; stir until stuffing mix is moistened.  Set aside.  Place chicken in 13x9" baking dish; sprinkle with basil and cheese.  Top with stuffing mixture, bake 30 minutes or until chicken is cooked through.

Amish Scalloped Potatoes and Ham

5 lg potatoes
2 1/2 c milk
1 c cubed ham
2 tsp butter
1 tsp salt
1 1/2 tsp flour

Peel potatoes, slice thin.  Place half of potatoes in greased casserole dish, add half of other dry ingredients.  Add rest of potatoes, then remaining ingredients.  Pour milk over top and bake in 400 degree oven for 1 1/2 hours.

Ritz Chicken Casserole

4 C. cubed cooked chicken 
1 can (10-3/4 oz.) condensed cream of chicken soup, undiluted
1/2 C. sour cream
1/2 C. Ritz cracker crumbs (about 12 crackers)
1 T. butter or margarine, melted
1/2 t. celery seed
fresh parsley and sweet red pepper ring, optional

Combine chicken, soup and sour cream; spread into a greased 13 x 9-inch baking dish. Combine crumbs, butter and celery seed; sprinkle over chicken mixture.

Bake, uncovered, at 350°. for 30-35 minutes or until bubbly. Garnish with parsley and red pepper, if desired.

Rice & Sausage Casserole

1 c. uncooked rice
1 lb. bulk sausage
1 lg onions
1 1/2 c. chopped celery
1 chopped green pepper
1 envelope Lipton Chicken Noodle Soup
 2 1/2 c. boiling water

Cook rice; brown meat- adding vegetables; make soup with boiling water; combine everything, bake 325° 30-40 minutes.

Here is an easy one the DH loves a lot...

Beef and Biscuit Casserole

1 can refridgerated biscuits
1 1/2 lbs ground make less fatty I sub 1/2 lb ground turkey
1 c. chopped onion
1 8 oz package light cream cheese
1 can cream of mushroom soup
1/4 c. milk
1 tsp salt
1/4 c ketchup

In large skillet brown meat and onions. Drain off fat....Combine cream cheese, soup and milk. Stir in the ketchup, salt and meat mix. transfer to 2 qt baking dish and bake at 375 degrees for 15 minutes. place biscuits along edge of the casserole and place back in the oven for another 15-20 minutes or until biscuits are golden brown...

serves 4-6

Shepards Pie....

3 C. worth of Potatoes

1 lb ground beef

1 can cream of mushroom soup

2 c. mixed vegetables

1/2 onion chopped

1 clove garlic, chopped fine

Salt, Salt and Pepper

Preheat oven to 375

Boil Potatoes...then mash...set aside

Brown meat in skillet with onion and garlic. When done, add can of cream of mushroom soup and mixed veggies...cook for 4-5 in baking dish

top with mashed potatoes

bake uncovered for 30 minutes...mashed potatoes should be browned.

Beef and Cornbread Bake:  A great recipe from Pace brand Picante Sauce...the back of a jar had this...really good.

1 lb. ground beef
1 tsp. dried oregano leaves, crushed
3/4 cup Picante Sauce
1 can (8 oz.) tomato sauce
1 can (about 16 oz.) whole kernel corn, drained
1/2 cup shredded Cheddar cheese
1 pkg. (about 8 oz.) corn muffin mix

PREHEAT oven to 375°F.

COOK beef and oregano in skillet until browned. Pour off fat.

ADD picante sauce, tomato sauce and corn. Heat through. Stir in cheese. Pour into 2-qt. square baking dish.

PREPARE corn muffin mix according to pkg. directions. Spread over meat mixture.

BAKE 25 to 30 min. or until topping is golden brown. Let stand 10 min

YUMMY....all I can say....when I don't really want to cook at all...

Easy Chili Dog Casserole.....

  • 1 pkg. corn muffin mix
  • 2 cans of chili, with or without beans
  • 1 pkg hot dogs, sliced
  • 6 green onions, chopped
  • 1/3 brick Velveeta cheese, cubed


Prepare corn muffin mix and set aside. Mix all other ingredients and pour into a greased baking dish or casserole. Pour corn muffin batter over top; bake at 350 degrees about 20-25 minutes or until done.

Arroz Con Pollo

4 boneless skinless chicken breasts
1 lb hot italian sausage
1 lg green pepper, chopped
1 lg red pepper, chopped
1 tbs garlic, minced
1/2 cup chopped onion, chopped
1 pkg yellow rice or saffron rice, family sized
salt & pepper
hot sauce
good grade olive oil

Coat the bottom of a large fry pan or saute pan with olive oil. Over med high heat, saute garlic and onion in the oil until tender but not browned.

Cut the chicken breasts into 1.5" chunks. Remove the sausage from its casings and crumble into small pieces. Add the chicken and sausage to the garlic and onion mixture; salt and pepper to taste. Saute the mixture, stirring frequently.

When the meats are almost cooked through, add the chopped pepper and continue to saute until done.

Add the rice and any packaged seasonings to the mixture and stir. Add water (according to package directions) and hot sauce to taste and stir.

Cover and simmer until water is absorbed, approx. 25 minutes or according to package directions.

Fluff with fork and serve.

Chorizo can be substituted for the Italian sausage.

Frozen peas may be used instead of the pepper. If so, add them when the rice and water is added to the pan.

Ground Beef Skillet Casserole


  • 8 ounces uncooked small tube pasta
  • 1 pound lean ground beef
  • 3/4 cup diced onion
  • 3/4 cup diced green pepper
  • 1 can (28 ounces) diced tomatoes, undrained
  • 2 jalapeno peppers, seeded and chopped
  • 1 tablespoon honey
  • 2 to 3 teaspoons chili powder
  • 3/4 teaspoon salt
  • 1-1/2 cups reduced-fat sour cream


Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Add the tomatoes, jalapenos, honey, chili powder and salt. Reduce heat to low; cook, uncovered, for 10 minutes, stirring occasionally.
    Drain pasta; add to beef mixture. Add sour cream; cook and stir until heated through (do not boil). Yield: 8 servings

Chicken Crescent Casserole


  • 1 celery rib, sliced
  • 3 tablespoons butter, divided
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 2/3 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons dried minced onion
  • 3 cups cubed cooked chicken
  • 1 can (8 ounces) sliced water chestnuts, drained
  • 1 jar (4-1/2 ounces) sliced mushrooms, drained
  • 2/3 cup shredded Swiss cheese
  • 1 tube (8 ounces) Pillsbury® Refrigerated Crescent Dinner Rolls
  • 1/2 cup sliced almonds ( I omitted the almonds)


In a large saucepan, saute celery in 1 tablespoon butter until tender. Stir in the soup, mayonnaise, sour cream, onion, chicken, water chestnuts and mushrooms. Cook and stir over medium heat just until mixture begins to boil. Transfer to an ungreased 13-in. x 9-in. baking dish. Sprinkle with cheese.
    Unroll crescent roll dough into a rectangle; seal seams and perforations. Place over cheese. Melt the remaining butter; toss with nuts and sprinkle over top. Bake, uncovered, at 375° for 20-25 minutes or until golden brown. Yield: 8-10 servings.

Cheesy Rice and Corn Casserole

1/2 cup Less Fat Cream Cheese with Chive & Onion

1   egg, beaten
2 cups cooked instant brown rice
1 can  (15-1/4 oz.) corn with red and green bell peppers, drained
1 cup 2% Milk Shredded Cheddar Cheese, divided
2 Tbsp.  chopped fresh cilantro
Make It

HEAT oven to 375°F. Mix cream cheese and egg in large bowl until well blended. Stir in rice, corn, 3/4 cup Cheddar and cilantro. Spoon into greased 1-1/2-qt. baking dish.

SPRINKLE with remaining Cheddar.

BAKE 20 to 25 min. or until Cheddar is melted and casserole is heated through.

One of my Family's Favorites

Chili Casserole


  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 can (16 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) tomato sauce
  • 1 can (14-1/2 ounces) stewed tomatoes
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups cooked noodles


In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the beans, tomato sauce, tomatoes, garlic powder, salt and pepper. Cover and simmer for 5 minutes. Stir in noodles; heat through. Yield: 6 servings.
