Chicken Breast Bleu Cheese Dip


Ingredients:

  • 4 - 6 skinless, boneless chicken breast halves
  • Note: I have even purchased a rotisserie chicken and it works for me
  • 1 (12 ounce) bottle of your favourite BBQ sauce for chicken
  • 3 Tbsp. butter
  • 1 (8 ounce) package of cream cheese, room temperature
  • 1/2 cup quality blue cheese salad dressing
  • Note: If you're looking for a richer flavour then add some fresh blue cheese crumbled into salad dressing.

Directions:

  1. Preheat oven to 375 degrees F.
  2. Place chicken in a pot with enough water to cover.
  3. Bring to a boil and cook for 25-30 minutes, or until juices run clear.
  4. Drain liquid from saucepan and break/tear chicken apart.
  5. Mix wing sauce and butter in a saucepan with shredded chicken.
  6. Bring to a boil, reduce heat to low and simmer for 10 minutes.
  7. Spread cream cheese over the bottom of an 8 x 8 inch baking dish.
  8. Pour chicken mixture over cream cheese.
  9. Top with dressing.
  10.  Bake for 15 minutes in a preheated oven, until hot and bubbly.
  11.  This is a great dip for toasted pita triangles, Tostito Corn Chips, ripple chips etc. or you can place it on an onion bun with lettuce, tomatoes, onions etc.
