Peanut Butter Easter Eggs Covered with Chocolate

An easy sweet treat with a peanut butter center.

Ingredients:
  • Two 3.4 oz. pkgs. cook-and-serve pudding mix (vanilla, butterscoth, chocolate)
  • 1/2 cup butter, melted
  • 1/2 cup milk
  • 5 - 6 cups confectioners' sugar
  • 2 cups peanut butter
  • 4 cups (24 oz.) semisweet chocolate chips
  • 2 tsp. shortening
  • assorted decorating icings, cake decorator candy flowers
Directions:
  1. In a large saucepan, combine pudding mixes, butter, milk.
  2. Cook, stir over medium heat until mixture comes to a boil.
  3. Cook, stir 1-2 minutes longer until thickened.
  4. Remove from heat and stir in confectioners' sugar and peanut butter.
  5. Cool slightly.
  6. Shape 1/2 cupfuls into egg shapes.
  7. Place on a waxed paper-lined baking sheet; refrigerate until set.
  8. In a microwave or heavy saucepan or double boiler, melt chocolate chips and shortening.
  9. Stir until smooth.
  10. Dip eggs in chocolate and allow excess to drip off.
  11. Return eggs to waxed paper or a cookie rack to set.
  12. Decorate with icing or candies as desired.
  13. Store in an airtight container.
