Danish Meatballs

Ingredients:

  • 1 lb. minced pork and beef blend
  • Instead of pork you can use 1 lb. minced chicken or turkey or a blend of both
  • 1 onion grated or finely chopped
  • 1/2 cup fresh breadcrumbs or I have often used bought seasoned breadcrumbs
  • 3 Tbsp. milk
  • 1/2 tsp. dried thyme
  • 2 tsp. parsley, dry or fresh but I prefer fresh
  • Note: I sometimes add a dash of Tobasco sauce
  • salt and fresh ground black pepper to taste
  • 1 egg, beaten
  • flour for rolling meatballs in
  • oil for shallow frying
  • garnish with lemon wedges

Directions:

  1. Place pork, chicken, onion, breadcrumbs, milk, thyme and parsley in a bowl.
  2. Mix well and add salt and pepper to taste.
  3. Stir in beaten egg (mix needs to be soft but not sticky).
  4. Lightly flour hands, shape into small balls and roll in flour.
  5. Fry over med heat for 15-18 minutes, turn often to brown.
  6. Drain on paper towels and serve with lemon wedges or with spaghetti or as an appetizer in your favourite BBQ sauce.
