Cheese Grits Souffle

4 cups water
1-1/2 tsp. salt
1 cup quick-cooking grits
8 ozs. shredded cheddar cheese
1/2 cup grated parmesan cheese
2/3 cup milk
2 tbsp. butter
1/4 tsp. ground red pepper
4 eggs, lightly beaten
1/4 tsp. paprika
 
Directions:
/bring water and salt to a boil in a large saucepan. Stir in grits and return to
a boil. Cover, reduce heat and simmer for five minutes, stirring occasionally.
Remove from heat and add cheeses, milk, butter and red pepper. Add eggs and stir
well. Spoon into a lightly greased 2 quart casserole and sprinkle with paprika.
Bake at 350 for 1 hour or until thoroughly heated and lightly browned. Let stand
5 minutes before serving
