Corn Fritters

Flour-1/2 cup
Baking powder-1/2 tsp
Salt-1/2 tsp
Pepper-1/8 tsp
Egg-1, slightly beaten
Butter-1 TBLS melted
Milk-6 TBLS
Corn- 2 cups-whole kernel canned(drain the liquid first) or frozen
Chives-1 1/2 tsp finely minced(green onions,tops only)
Vegetable or Canola oil-enough to fry in 1/2" of oil in large skillet or you can
use a deep fryer if you have one. I don't own one myself and these turn out
perfect using a large skillet. but my favorite way to cook them is in my corn fritter cast iron skillet 
 
Directions:
Combine flour, baking powder, salt & pepper. Stir to blend. Add egg, melted
butter,& milk. Stir until well blended. Add corn, & chives.Stir again until
blended.
In a large skillet, heat enough oil to cover the bottom of skillet to 1/2". Heat
oil over medium heat till hot but not smoking. Scoop batter with a TBLS (I like
big fritters)and carefully spoon the batter into hot oil. Slightly flatten ea.
fritter with the back of a spoon. Cook until golden then carefully flip them
over to cook the other side to golden. Transfer to paper towel lined platter to
drain. Serve while warm.
