Southern Cornbread Dressing (Stuffing)

1 lb. turkey sausage, cooked
1 cup golden bell pepper, diced
2 stalks celery, diced
1 yellow onion, diced
1 (8 ounce) package ready made cornbread mix
1 1/2 cup oyster crackers
1 (14 ounce) can cream of celery soup
3 tbsp. fresh sage
2 tbsp. poultry seasoning
1 tbsp. salt substitute
Pepper
1 small carrot, shredded
1 cup chicken or turkey stock
1/4 cup butter
 
Directions:
Make cornbread according to package directions and crumble.

Pre-heat oven to 400 degrees.

Mix ingredients in a large bowl.

Pour into an 8X10 baking dish and bake 40 minutes.

Pour a little more stock over stuffing just before serving and garnish with more
fresh sage leaves.
