Twice Baked Cheddar Potatoes

6 large baking potatoes
8 Tbsp butter divided
1/4 lb bacon diced
1 medium onion finely chopped
1/2 cup milk
1 egg
1/2 tsp salt
1/8 white pepper
1 cup shredded cheddar cheese

 
Directions:
Clean and pierce potatoe, rub w/ 1 Tbsp butter, place on baking sheet bake at
375 degrees for one hour or until tender.

In a small skillet cook bacon over medium heat until crisp, remove to paper
towels, drain reserving 1 Tbsp of the drippings in pan.

In drippings saute onion until tender set aside.

Potatoes cool enouph cut thin slice off top of potatoe, discard.

Scoop out pulp leaving thin shell. In a bowl-stir in milk, egg,
salt/pepper,cheese, bacon and onion mix well with the pulp of the potatoe. Scoop
filling into shell. Then bake in oven at 375 degrees.
