2 (6oz.) pkgs. strawberry flavored gelatin
3 cups boiling water
3 cups cold water
5 medium oranges
1 (16oz.) pkg. fresh cranberries, coarsely chopped
2 cups sugar
Lettuce leaves for garnish
Orange-Cheese Dressing:
1 (8 oz.) pkg. cream cheese
1/3 cup orange juice
2 tsp. grated orange peel
Dash salt
In small bowl, at low speed, beat cream cheese
and orange juice until smooth. Stir in orange
peel and salt.
Directions:
In large bowl, dissolve gelatin in 3 cups of boiling water; stir in 3 cups cold
water. Refrigerate, stirring occasionally until mixture
is slightly thickened. Peel and chop oranges and
place in large bowl; add cranberries and sugar,
stirring until sugar is completely dissolved. Stir
fruit mixture into thickened gelatin. Pour into a
10 or 12-cup Bundt pan. Regrigerate until set. To
serve, unmold gelatin onto platter; garnish with
lettuce leaves. Serve with Orange cheese dressing.
