3 T Fresh lemon juice
1/2 t Rosemary
1/2 t Sage
1 lb Boneless, skinless chicken
Breasts
4 Garlic cloves; minced
8 oz Rotini pasta; cooked
1 Red onion; halve; thin slice
1 c Frozen peas
1 t Salt
1/2 c Apple juice
1/4 c Red wine vinegar
2 T Olive oil
12 t Hot sauce
1 Zucchini
-long strips with vegetable

1 Carrot
-long strips with vegetable
-peeler
Preheat oven to 375 degrees. Combine 2 tablespoons of
lemon juice, rosemary, and sage. With chicken on a
baking sheet, rub with the mixture.
Mash garlic with salt. Mix in apple juice, vinegar,
oil, hot sauce, and lemon juice remaining. Toss with
pasta. Add carrot and zucchini strips.
Serve at room temperature, warm or chilled. Serve
with crunch bread sticks.
