Ingredients

8 ounces boned cooked lamb, cut into 1/4 inch thick slices
1 tablespoon plus 1 teaspoon dijon style mustard
1/4 teaspoon ground thyme
1 tablespoon plus 1 1/2 teaspoons plain dried bread crumbs
1 tablespoon vegetable oil

Instructions

Spread both sides of each lamb slice with a thin coating of mustard;
sprinkle with thyme, then coat each slice lightly with an equal amount
of crumbs, being sure to use all of the crumbs. In a 10 inch nonstick
skillet heat the oil over medium heat; add the lamb and cook, turning
once, until browned on both sides, about 2 minutes on each side.
