Ingredients
---
5 ounces chicken livers
1/4 cup minced onion
1/4 cup minced celery
3 ounces peeled cooked potato, mashed or rice
1 1/2 teaspoons imitation bacon bits, crushed
 dash salt
 dash pepper
2 1/4 teaspoons seasoned dried bread crumbs
1 1/2 teaspoons margarine
2 teaspoons ketchup

Instructions

In a 8 inch nonstick skillet cook the livers over high heat just until
they lose red color, 2 to 3 minutes; transfer to a bowl and, using a
fork, mash. In the same skillet combine the onion and celery; cover
and cook over low heat until the vegetables are soft. Add cooked
vegetables, potato, bacon bits, salt and pepper to mashed livers and
mix until thoroughly combined; shape mixture into 2 equal patties. On
a sheet of wax paper, or on a paper plate, press patties into crumbs,
turning to coat both sides. In a clean skillet heat the margarine over
medium high heat until bubbly and hot; add the patties and cook until
browned on all sides, 2 to 4 minutes. Serve with the ketchup.
