Ingredients

Anchovy Butter:
1/2 cup butter or margarine
2 anchovy fillets mashed or 2 tablespoons anchovy paste
1 teaspoon lemon juice
1/8 teaspoon paprika

Catsup Butter:
1/2 cup butter or margarine
1/4 cup catsup

Black Butter:
1/2 cup butter or margarine
4 ounces black caviar
1 teaspoon lemon juice

Red Butter:
1/2 cup butter or margarine
4 ounces red caviar
2 tablespoons minced onion
1 tablespoon lemon juice

Cheese Butter:
1/2 cup butter or margarine
1/2 cup soft cheese

Chili Butter:
1/2 cup butter or margarine
4 tablespoons chili sauce or 1/2 teaspoon chili powder

Chive Butter:
1/2 cup butter or margarine
2 tablespoons minced chives
1/2 teaspoon tarragon vinegar

Egg Butter:
1/2 cup butter or margarine
2 hard cooked eggs put twice through a ricer
1/4 teaspoon tabasco sauce
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

Instructions
---

Whip the butter or margarine after it has stood at room temperature 30
minutes. Blend the flavoring into it, then put it in a tightly covered
container in the refrigerator for 1 hour or longer so that the flavors
blend thoroughly. The spread must again be softened by standing at
room temperature before using.
