In order to get into the basement, I'm first supposed to sell the bouncer in MM and then serve the principal the hot chocolate, but what land do I serve him in? Isn't he in more than one land?

When you go to MM and sell the Bouncer, the lower-paying customers will come around in MM (the bouncer keeps them away), so sell the Bouncer and stay in MM :)
