We love quesadillas in our house. I'm a big fan of just the cheese sort, but my husband loves to add chicken or beef to his. Even my son will eat them. Here's a recipe from ParentsConnect.
Ingredients:
8 10" tortillas; 1/2 cup of canned refried beans; 1 cup (loose) of washed, baby spinach leaves; assorted veggies (can be cooked) like zucchini, bell peppers, or onions; 1 cup of shredded cheddar cheese; 2 tbsp of soft butter; sour cream, salsa, or guacamole for dipping
Directions:
1) Heat a pan over medium-high heat
2) Butter one side of four tortillas and set aside
3) Spread a layer of refried beans onto the remaining four tortillas and set aside
4) Place a buttered tortilla into the pan (butter-side down) and sprinkle a 1/4 cup of cheese over it. Add a single layer of spinach on top of the cheese. Add cooked veggies. Place beaned tortilla on top. Cook for another minute.
5) Flip and allow the beans to heat thoroughly. When cheese begins to melt out and the spinach looks slightly wilted, the quesadilla is done.
6) Repeat until all tortillas are gone.
7) Cut into triangles and serve with dips.
