Baked Egg Puffs (DD)

 This recipe is from "Deceptively Delicious" by Jessica Seinfeld. Prep time is 5 minutes.  Total time to cook is 20 minutes.  Serves 4.

Ingredients:

Nonstick cooking spray; 2 large eggs; 4 large egg whites; 1/2 cup yellow squash or butternut squash puree;  2 tablespoons shredded reduced-fat cheddar cheese; 2 tablespoons all-purpose flour; 1/2 teaspoon baking powder; 1/4 teaspoon salt

Directions:

1) Preheat the oven to 400 degrees Farenheit.  Coat 4 (1/2 cup) ramekins or coffee cups with cooking spray and set on a bakng sheet.

2) In a large bowl, whisk the eggs, egg whites, squash puree, cheese, four, baking powder, and salt until combined.  Divide the mixture among the ramekins or cups and bake until no longer runny in the center when pierced with the tip of a knife, 13 to 15 minutes.  Serve immediately.

 Okay, I have only made this once.  My son ate it, but I didn't like it much at the time.  I think I was hoping for a different taste or that I wasn't expecting something so breadlike to taste like eggs.  I am willing to try to make it again, but it will have to be a time when I really want to eat eggs.
