We joke about this omelet because everyone in my hubby's family is picky, but they all love this omelet. We ended up calling it this because that's what my son called it.
You need:
Eggs, Milk, Salt, Pepper, Kielbasa, Onions, Green Bellpeppers, Chedder Cheese (or Mexican Cheese Mix).
Chop the kielbasa and onions. Fry them hot with just a little bit of water to carmelize the onions.
Beat the eggs, add a little milk, salt and pepper.
Chop the bellpepper and toss it in with the meat and onions to heat them up a little bit.
Pour the egg mix into a hot frying pan (put a tiny bit of oil in the bottom to help with sticking). After the edges have risen a little, add the meat and veggie mix to one side and fold over.
After the omelet is done cooking, add the cheese to the top.
*Sorry I don't have exact measurements. We tend to personalize everyone's omelet. Some with more peppers, others with less meat. Play around with the recipe and see what you come up with.
