I love mushrooms, but I wanted to add greens, so I found this recipe that includes asparagus.
You need:
Portabella Mushrooms, Asparagus, Onions, Olive Oil, Salt, and Pepper
Preheat the oven to about 450 degrees.
Cut mushrooms into lengths, break the woody ends off the asparagus, and chop onions into rings. Keep them all pretty thick or they will burn easily in the oven.
Toss the veggies with the olive oil and season.
Throw them in an oven-safe dish (preferably deep) and bake for about a half an hour. You'll smell it when it's done.
This dish is wonderful with chicken. Even my hubby, who hates mushrooms, went back for seconds. My son stuck with the onion rings, but at least he ate some vegetables.
