My husband loves this side dish.  I used to make it quite a lot, but as of late I've been trying to get my son to eat more colorful vegetables.

Ingredients:

Potatoes, milk, butter, salt, pepper, garlic powder, cheese, bacon bits

Poke holes in the potatoes and smear with butter.  Bake at 400 degrees for about an hour.  Cut them in half and fork out the insides, leaving the shells intact.  Mix with butter and milk, like you were making mashed potatoes.  Add seasonings to your liking.  Fork the mixture back into the shells.  Top with cheese and bacon bits.  Stick them back in the oven for about 15 minutes.
