Better Pancakes

 This one I know came from Yum-O.  This lady ignores the directions on the box of whole-wheat pancake mix and does her own thing.  She added milk instead of water and more eggs to increase the protein.  She also added fruits for more fiber and other vitamins.

INGREDIENTS:

For pancake mixes requiring liquid and egg, use:

  • 2 cups mix
  • 1 cup milk
  • 3 eggs

For pancake mix requiring liquid only, use:

  • 2 cups mix
  • 1 1/2 cups milk
  • 2 eggs

Fruit stir-ins:

  • 1/2 pint blueberries
  • 1/2 banana, cut in half lengthwise, then sliced
  • Canola oil, for griddle
  • Maple syrup or honey, to pass at table

DIRECTIONS:

  1. Measure out the pancake mix – ignore the directions from there onward and follow the amounts in this recipe. Stir and adjust the milk until you achieve a consistency that is thick, but able to be poured. Add the blueberries and sliced bananas, then stir to combine.
  2. Pre-heat a large nonstick skillet or griddle over medium heat. Add a drizzle of canola oil. Pour 1/4 cup measure of batter onto hot, greased griddle. Cook until the sides are dry and bubbles are popping around the edges, then flip and cook the other side. Continue until all the batter is used up. Serve with maple syrup or honey.

So I made these pancakes for dinner the other night.  We love breakfast for dinner around here for some reason.  They were really good.  My son didn't really eat them, but I think it was more because I had cooked scrambled eggs and sausage, which he loves.  He will generally eat pancakes and waffles because he adores the idea of syrup (anything you squeeze out of a bottle is a good thing in his book).  We have leftovers, so I imagine that he'll be eating them for lunch tomorrow.  They were very filling and I loved how the blueberries would gush in your mouth.

Which reminds me, this recipe cooks for four, which means about 12 pancakes on average.

 Okay, so I was right.  I had the pancakes for lunch today and my son ate them up.  They were still really good, even though I just heated them up on the stove (I hate the microwave).
