Dr. Suess' Finney's Freshest Fish

 I got this from ParentsConnect.com.

Ingredients:

2 eggs, 1 cup of almonds, 1/2 cup of toasted oats cereal (like Cheerios), 2 1/2 teaspoons of Extra Virgin Olive Oil, 4 fillets of firm, white fish, 1 teaspoon of salt, 1 teaspoon of pepper

Directions:

1) Preheat oven to 450

2) Beat eggs until frothy.  Pour into shallow plate or bowl.

3) Chop almonds and cereal in blender until crumbs and pour onto wax paper or aluminum foil

4) Grease baking sheet with a teaspoon of the olive oil.

5) Pat fish dry with paper towel.  Dip in the eggs, then press both sides into the crumbs.  Let sit for 15 minute to set the crust.

6) Sprinkle the fish with salt, pepper, and the remaining olive oil.

7) Bake until fish is done (about fifteen minutes).
