I got this from ParentsConnect.com. It's a peanut butter and banana pancake made from scratch.
Ingredients:
1 cup of flour, 2 teaspoons of baking powder, 1/2 teaspoon of salt, 2 tablespoons of sugar, 1 egg, 2 1/2 tablespoons of peanut butter, 1 cup of whole milk, 3 tablespoons of melted butter (plus an extra teaspoon to grease the pan with), 2 bananas (sliced 1/4 of an inch thick), 1/4 cup of shelled peanuts (salted or unsalted) optional
Directions:
1) In a small bowl, combine flour, baking powder, salt, and sugar. Mix well.
2) In a large bowl, mix egg, peanut butter, and milk. When smooth add the butter (melted).
3) Add the dry ingredients to the egg mixture and mix until smooth. Add one fourth of the bananas.
4) Grease the pan and heat to medium.
5) Drop about a 1/4 cup of the batter to make pancakes.
6) Serve stacks of flapjacks with bananas, peanuts, or honey (or any mix thereof).
