Roast Beef

2lbs roast beef, I like to use the chuck
2 Beef bouillon cubes
Garlic salt
Onion powder
Pepper

The seasonings are just to taste, combine it all in a crock pot and cover the meat with water. Cook on high for 4hrs or on low for 8. The meat should be able to pull apart easily.

Set aside about half of roast to use for dinner tomorrow ... after this recipe.

Serve the roast with some mashed potatoes & a bagged salad.


For the half the roast that was set aside,let it cool down then pull it apart, I like to use a knife to help so I can get it really thin. Put it in a container with BBQ sauce over night in the fridge. Then the next morning put it back into the crock pot with more BBQ. Keep it on low until an hour or two before dinner then switch to simmer. I like to mix the BBQ sauce with apple sauce. It takes some of the tang away that BBQ sauce can have. We make beef BBQ sandwiches with toasted bread. You can also use a bun. Just serve it with chips for an easy dinner.

BEEF ENCHILADAS

1lb hamburger

1 pkg of shredded four cheese cheese

1 large can stewed tomatoes

1 pkg enchilada seasoning

sour cream

12 count flour tortillas

brown hamburger. add seasoning packet, and 1 cup water mix well. take a tortilla and place 2 spoonfuls of enchilada mixture in tortilla, then add a big spoonful of stewed tomatoes, then a lil cheese, and roll up into a burrito and place in pan. then repeat until all 12 tortillas are used. then take the extra meat and tomato mixture and pour over made enchiladas. then add cheese on top, and bake at 350 deg F until the cheese is melted.

Not sure what to call this recipe because my MIL made it once when I was over there, so here it is.

1 lb ground beef

1 sm onion

Potatoes - sliced or cubed

Brown ground beef & onion, drain grease.  Add sliced potatoes and butter and let cook until potatoes are soft.  Add salt and pepper to taste. 

You can also add peppers but my family does not like them (I do).  I have also had it with some tomato sauce mixed in instead of adding ketchup.

I normally dump a bunch of ketchup on my serving and mix.
