*Persimmon Bread*
2 eggs
3/4 c. unsweetened applesauce
1/2 tsp salt
1 tsp. soda
1 pt. persimmon preserves
1/2 c. raisins
1 1/2c. all-purpose flour
Preheat oven to 325. In a large bowl, mix eggs & applesauce. Add soda & persimmon; mix well.Then add flour & raisins & salt. Mix all this together real well, an electric mixer works better. Pour batter into sprayed loaf pan & bake for 1 hr & 15 mins or until done.

*Banana Nut bread*
2 c. wheat flour
1 c raw sugar
1 tsp salt
1 tsp lemon juice
1 T. baking powder
1/2 tsp. baking soda
3 lg. eggs
3/4 olive oil
3 lg. ripe bananas
1 c. chopped walnuts or pecans
Preheat oven to 360. Lightly spray two loaf pans. Sift flour with salt, baking soda & baking powder into a large bowl; set aside. Mix well together bananas sugar, lemon juice, eggs, olive oil & walnuts/pecans. Fold mixture into flour. Divide equally into loaf pans. Bake on middle rack for 1 hr or until golden brown. Allow to cool in loaf pans for 5 mins, then transfer to wire rack.

*Papa's Bread*
5 1/2-6 c bread flour
3 T. sugar
2 pkgs. yeast(rapid rise)
2 tsp. salt
1 1/2 c. water
1/2 c. milk
2 T. margarine
In a large bowl, combine 2 cups flour, sugar, dry yeast, & salt. Heat water, milk & margarine until just war then stir into dry ingredients. Beat 2 mins at med speed. Stir in 1 more cup of flour; beat at high speed for 2 more mins. Next, by hand, add enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth & elastic, about 8 to 10 mins. Cover, let rest 10 mins. Divide dough in half, roll each half into a 12x7 inch rectangle. Beginning at short end of each rectangle, roll up tightly, as for jelly rolls. Pinch seams & ends to seal. Place seam side down in greased pans or ungreased baking stone. Cover, let rise until doubled, about 45 mins. Bake in over at 400 degrees for about 25 to 30 mins.
Monkey Bread
Ingredients:
- 3 (12 ounce) packages refrigerated biscuit dough
- 1 cup white sugar
- 2 teaspoons ground cinnamon
- 1/2 cup margarine
- 1 cup packed brown sugar
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9 or 10 inch tube/Bundt® pan.
- Mix white sugar and cinnamon in a plastic bag. Cut biscuits into quarters. Shake 6 to 8 biscuit pieces in the sugar cinnamon mix. Arrange pieces in the bottom of the prepared pan. Continue until all biscuits are coated and placed in pan. If using nuts and raisins, arrange them in and among the biscuit pieces as you go along.
- In a small saucepan, melt the margarine with the brown sugar over medium heat. Boil for 1 minute. Pour over the biscuits.
- Bake at 350 degrees F (175 degrees C) for 35 minutes. Let bread cool in pan for 10 minutes, then turn out onto a plate. Do not cut! The bread just pulls apart.
