*Eskimo Delight*
1/2 gal. softened vanilla ice cream
1 lg. bag oreo cookies
1 c. chopped pecans
1 lg. ctn. Cool Whip
1/2 stick butter

Put oreos in a brown bag & crush. Mix ice cream & cool whip together. Melt butter & mix in pecans. In a 9x13 inch pan put half of the cookies in bottom. Then half of the pecans on top of cookies, then put all ice cream mix on top of cookies & nuts. Add rest of cookies, then the rest of the nuts. It should look like a giant ice cream sandwich. Freeze until firm.

*Banana Split Pizza*

1 box brownie mix
Several strawberries, sliced
8oz cream cheese
1 tsp. Vanilla
1 T. Butter
1 oz semi-sweet chocolate square
3 bananas, sliced
2 T. Bottled lemon juice
14 o. condensed milk
1/2 c. frozen orange or pineapple juice

Mix brownies as directed on package & spread on pizza pan & bake. Cool. Place sliced bananas & strawberries in lemon juice to soak for a little while. Then drain & set aside. Mix cream cheese, mil, vanilla & frozen juice of choice together. Beat well & chill. Spread over brownie mix then arrange strawberries & bananas. Melt butter & chocolate in microwave; stirring well. Drizzle over top of pizza. Chill for one(1) hr & serve.

*Peach cobbler*

1 Stick butter
1 c. flour
1 1/2 tsp. baking powder
1 c. sugar
1 c. milk
1 tsp. nutmeg
1 tsp. vanilla
1 lg. can sliced peaches

Melt butter in casserole dish. In bowl, mix flour, baking powder, sugar, milk, nutmeg, & vanilla; except peaches. Pour batter in casserole dish. Place peaches evenly over batter. bake at 400 degrees for about 45 mins.

 Pumpkin Cheesecake Dessert Recipe

With its gingersnap crust and maple syrup drizzle, this rich and creamy spiced pumpkin dessert never fails to get rave reviews. It cuts nicely, too.

Ingredients
* 32 gingersnap cookies, crushed (about 1-1/2 cups)
* 1/4 cup butter, melted
* 5 packages (8 ounces each) cream cheese, softened
* 1 cup sugar
* 1 can (15 ounces) solid-pack pumpkin
* 1 teaspoon ground cinnamon
* 1 teaspoon vanilla extract
* 5 eggs, lightly beaten
* Dash ground nutmeg
* Maple syrup
Directions
* In a small bowl, combine gingersnap crumbs and butter. Press into a greased 13-in. x 9-in. baking dish; set aside.
* In a large bowl, beat cream cheese and sugar until smooth. Beat in the pumpkin, cinnamon and vanilla. Add eggs; beat on low speed just until combined. Pour over crust; sprinkle with nutmeg.
* Bake at 350° for 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of baking dish to loosen; cool 1 hour longer. Refrigerate overnight.
* Cut into squares; serve with syrup. Refrigerate leftovers. Yield:  24 servings.
