Crock Pot Chicken & Dumplings

Prep: 20 minutes
Cook: 8 hours
Serves: 8


Ingredients:


6 skinless, boneless chicken breast halves  (about 1 1/2 pounds), cut into 1-inch pieces
2 medium Yukon gold potatoes, cut into 1-inch pieces (about 2 cups)
2 cups whole baby carrots
2 stalks celery, sliced (about 1 cup)
2 can (10 3/4 ounces each) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 cup water
1 teaspoon dried thyme leaves, crushed
1/4 teaspoon ground black pepper
2 cups all-purpose baking mix
2/3 cup milk


Directions:


Place the chicken, potatoes, carrots and celery into a 6-quart slow cooker.

Stir the soup, water, thyme and black pepper in a small bowl. Pour the soup mixture over the chicken and vegetables.

Cover and cook on LOW for 7 to 8 hours* or until the chicken is cooked through.

Stir the baking mix and milk in a medium bowl.  Drop the batter by spoonfuls onto the chicken mixture.  Increase the heat to HIGH.  Tilt the lid to vent and cook for 30 minutes or until the dumplings are cooked in the center.

*Or on HIGH for 4 to 5 hours.

Crock Pot Chicken Cacciatore

Prep: 10 minutes
Cook: 8 hours
Serves: 6


Ingredients:


1 1/2 cup Swanson® Chicken Stock
2 teaspoons garlic powder
2 cans (about 14 1/2 ounces each) diced Italian-style tomatoes
4 cups mushrooms cut in half (about 12 ounces)
2 large onions, chopped (about 2 cups)
3 pounds chicken parts, skin removed
1/4 cup cornstarch
1 1/4 (16 ounce) packages spaghetti, cooked and drained (about 10 cups)


Directions:


Stir 1 cup stock, garlic powder, tomatoes, mushrooms and onions in a 5- to 6-quart slow cooker. Add the chicken and turn to coat. 

Cover and cook on LOW for 7 to 8 hours* or until the chicken is cooked through. Remove the chicken from the cooker and keep warm.

Stir the cornstarch and remaining stock in a small bowl until the mixture is smooth. Stir the cornstarch mixture in the cooker. Cover and cook on HIGH for 10 minutes or until the mixture boils and thickens. Serve with the chicken and spaghetti.

*Or on HIGH for 4 to 5 hours.

A fellow cafemommer told me about this one, it's one of my all time favs now!  It works on pork or beef as well, just use beef gravy for beef and pork gravy for pork.  I have even thrown in halved red skin potatoes, carrots and peas.. it's DELICIOUS!

Three-envelope Crockpot Chicken

1. 2 lbs boneless/skinless chicken breasts
2. 1 dry envelope Ranch Dressing Mix
3. 1 dry envelope Italian Dressing Mix
4. 1 dry envelope Chicken Gravy Mix
5. 1 cup Water


Line or spray/grease crockpot. Add chicken. Mix the three dry envelopes with 1 cup of water. Pour over chicken and cook on low for 7-8 hours. I usually just throw the chicken in frozen.

OK, I hope someone will like to try this one out.  It my chicken-n-noodles.

Perp Time:  about 20 minutes

Cooking time: 8 hours

Ingredients:

Chicken quarters (about 4)

1 box or 2 cans of chicken broth

1/4 tsp celery seeds

onion

salt and pepper to taste

Direcetions:

Wash and cut chicken quarters up so that they fit into the crock pot and add liquids.  Liquids should cover the chicken.  Throw in the rest of the ingrediants and cook.

When chicken is soft and tender, pull out and let cool.  Make sure to pull out all the skins if you used chicken with the skins.  Bebone chicken and add it all back into the pot.

This would be a good time to make up your mashed potatoes.

Cook up your noodles and put them in and the pot too.  Heat through.

Serve over your mashed potatoes and add a veggie of your choice.

Cheesy Chicken

Chicken (I use the boneless skinless tendors)

1 can cheese soup

1 can cream of chicken soup

a little salt and pepper

and a little garlic powder if you'd like

Mix chicken soup and cheese soup together, salt, pepper, and garlic powder and put on top of chicken in crock pot and cook on low for 6 - 8 hours.

serve over rice or noodles.

Creamy Chicken & Mushrooms

(this one is super easy and quick!)

Chicken

1 can of cream of mushroom soup

1 can cream of chicken soup

extra mushrooms if you'd like

salt & pepper

garlic powder


mix soups, pepper, salt, garlic powder and mushrooms together and put over chicken.. cook on low for 6 - 8 hours. serve over noodles or rice.

Slow Cooker Chicken

8 skinless, boneless chicken breast halves
4 potatoes, cubed
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can milk
1 tablespoon cornstarch
1 (1 ounce) package dry onion soup mix
Put the chicken pieces and potatoes into a slow cooker. Combine the soup, milk, cornstarch and dry soup mix and pour over the chicken and potatoes. Cook for 8 to 10 hours on low. Serve!

Slow Cooker Hawaiian Chicken

2 (18 ounce) bottles barbeque sauce
1 (15 ounce) can pineapple chunks
1 green bell pepper, chopped
1 onion, chopped
2 cloves garlic, minced
8 boneless, skinless chicken breast halves

In a large bowl, mix together barbecue sauce, pineapple with juice, green bell pepper, onion, and garlic. Arrange 4 of the chicken breasts in the bottom of a slow cooker. Pour half of the barbecue sauce over the chicken. Place remaining chicken in slow cooker, and pour remaining sauce over the top. Cover, and cook on Low for 8 to 9 hours.
