Beer Beef Stew with Dumplings

Ingredients
1¼ lb (500g) beef, cubed
3 tbsp all-purpose (plain) flour
2 onions, medium - sliced
½ pint (300ml) beer (ale)
2 tsp prepared mustard (paste)
1 tsp brown sugar
  salt and pepper
Dumplings
3 oz (85g) self-raising flour
1 oz (25g) butter
1 tsp dried herbs
pinch salt and pepper
2fl oz (50 ml) milk
Method
1 Put the flour in a plastic bag and add the beef. Toss around until coated.
2 You could now brown the meat if you desire - however we did not have time.
3 Put the beef and onion in the crock pot.
4 Mix the other ingredients together and pour over the beef.
5 Cook on low for 8-10 hours
6 Sometime during this period make the dumplings.
7 Combine all the ingredients, with sufficient milk (may need slightly more or less) to make a soft dough.
8 Shape into four to six balls.
9 About 40 minutes prior to serving, put the dumplings in the crock pot.
10 Turn on high, replace lid. And enjoy in 30-40 minutes.
Notes
Next time, I would make double the dumpling mix and make twice the number of dumplings.
The dumplings worked very well.

Easy Crock Pot Beef Stew Recipe

Vegetables Choose your favorite mix of vegetables from:-
Frozen - these cook up just fine, will be soft but still seem to hold together.
Canned - same as frozen. Though tin peas really loose their color and go a grey sort of color.
Pre-Cut - fresh, pre-cut from the super-market (for when feeling lazy).
Fresh - cut into about 1 inch square pieces. Feel free to prepare the night before.

Meat Choose cheap, inexpensive cuts. The ones that are tougher and benefit from the slow cooking.

Our favorite is what we call blade, round pieces of stewing meat full of gristle (the meat you would ordinarily ignore – but it cooks up a dream and the gristle goes soft and yummy).

Cut into bit size chunks or leave whole, doesn't really matter.

Flavoring Your favorite flavor of tin soup. We usually choose a beef based one like ‘Minestrone’ or ‘Italian Meat and Veggies’.

Alternatively use one of those ‘Simmer Sauces’ – the ones you use for stir fry’s. We have found that the no name brand ones (which I don’t like in stir fry’s), work well and; they are cheap. Try ‘Honey Mustard’ – my favorite.

Optional Extras Worcestershire Sauce - tablespoon or two
Soy Sauce - tablespoon or two
Tomato Sauce - tablespoon or two or more
Tin of Tomatoes.
Crushed garlic and/or ginger - teaspoon or two.
Herbs - best put in during last hour of cooking- teaspoon or two.
Salt and Pepper - added at end - to taste.

DIRECTIONS Chuck the Veggies in first, put the meat on top and pour in the soup. That’s it. Nothing else.

Do not add any water, the enclosed slow cooking will retain heaps.

Add any of the optional extras.

Cook for about 4–6 hours on high OR 8–10 hours on low.

Crock Pot Sweet and Tangy Meatballs Recipe

1.25 lbs. pre-cooked packaged meatballs
1/2 cup peach preserves
1 cup honey flavored bottled barbeque sauce
1 1/2 tablespoons balsamic vinegar
1/4 cup packed dark brown sugar
1/4 teaspoon lemon pepper

Mix all ingredients, excluding meatballs into crockpot.

Stir well to blend.

Add the pre-cooked meatballs.

Stir gently to evenly coat the meatballs.

Cook on low for 5 hours.

Serves 6.

These meatballs are great alone, or serve over cooked egg noodles.

Steph's Beef Stew :)

(I hardly ever measure anything so bare with me!)

I cut up about a cup full of carrots, potatoes, celery and onions.

Beef Stew meat

1 1/4 cup beef broth and then some.

Flour, salt & pepper

1 bay leaf

Cover the stew meat with flour, salt & pepper mixture, brown the mean in a pan for about 6-8 minutes until brown.

Put the vegetables in bottom of crock pot, then add the meat, put the bay leaf on top of that and then add the broth and then some. Just so its covering everything.

Cook on low for 6-8 hours. 8 hours is best.

Then about an hour or so before I serve I grab some bisquick ( 1 1/2 cups of that and 1/2 cup milk stir til soft dough forms) put spoonfuls on top and turn on high for an hour.

Its yummy.

Question: I made the Beer Beef Stew With Dumplings last night! It was so good...yum! But had some problems with the dumplings: I doubled the recipe like you said, but then had to add a ton of extra flour so that the dough would not be runny. And then they fell apart in the crock pot. Did this ever happen to you? What should the consistency of the dough be--before and after you cook it? Any thoughts? I'm definitely going to try this again because it was so tasty! :)

I've never used that dumpling recipe, I always use bisquick and they turn out good. I usually turn the crock pot on high and then add the dumplings and let them cook on high for an hour and then if we're not ready to eat yet turn it back on low til we're ready. Hope that helps :)

I made the flour dumplings before and hubby didn't like them as much as the bisquick and neither did I lol.

Um, why didn't I think of that? :)

I'll definitely use Bisquick next time. Great idea! Thanks!
