Slow-Cooked Broccoli
Ingredients:
- 20 ounces frozen chopped broccoli, partially thawed
- 1 can (10-3/4 oz.) condensed cream of celery soup, undiluted
- 2 cups shredded Cheddar cheese, divided
- 1/2 cup chopped onion
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon pepper
- 1 cup crushed butter-style crackers or saltines
- 2 tablespoons butter or margarine, cut into small pieces
Preparation:
In
a large bowl, combine broccoli, soup, 1 1/4 cups of the shredded
cheese, onion, Worcestershire sauce and pepper. Pour into a greased or
sprayed slow cooker. Sprinkle crackers over top; dot with butter. Cover
and cook on HIGH setting for 2-1/2 to 3 hours. Sprinkle with remaining
cheese then cook 10 minutes longer or until the cheese is melted.
Serves 8 to 10.
Slow Cookied Sweet Potato Casserole
Ingredients:
- 2 cans (18oz) sweet potatoes, drained and mashed
- 1/4 cup butter, melted
- 2 tablespoons sugar
- 2 tablespoons light brown sugar, packed
- 1 tablespoon orange juice
- 2 eggs, beaten
- 1/2 cup milk
- 1/2 cup chopped pecans
- 1/2 cup light brown sugar, packed
- 2 tablespoons flour
- 2 tablespoons butter, melted
Preparation:
Lightly butter the crock pot. Mix mashed sweet potatoes, butter, 2 tablespoons granulated sugar, and 2 tablespoons brown sugar together in a large bowl. Beat in juice, eggs, and milk. Transfer to the crock pot.
Combine pecans, brown sugar, flour, and 2 tablespoons butter. Spread
evenly over the top of the sweet potatoes. Cover and cook on high for 3
to 4 hours.
Serves about 6.
Cheesey Vegetable Bake
Ingredients:
- 4 cups frozen broccoli, cauliflower, and carrot blend or similar vegetable mixture, thawed
- 1/2 cup chopped onion
- 1 can (10 3/4 ounces) condensed cream of mushroom soup, regular or low fat
- 1 jar (2 ounces) chopped pimientos, drained
- 2 cups shredded American cheese (Velveeta or similar cheese)
- pepper, to taste
Preparation:
Spray
slow cooker with cooking spray. Combine vegetables, soup, pimiento,
onion, and cheese in slow cooker. Cover and cook on LOW for 4 to 6
hours. Stir in a little freshly ground black pepper or seasoned pepper,
to taste. Stir well before serving.
Serves 4 to 6.
Crock Pot Corn
Ingredients:
- 2 cups corn kernels
- 2 tablespoons sugar
- 2 eggs
- 1/4 cup flour
- 2 tablespoons butter
- 1 cup milk
- 1/2 teaspoon salt
Preparation:
Mix corn, sugar, eggs, flour, butter, milk and salt; place in slow cooker. Cook on high for one hour.
