My goal is to have dessert every day.Now what we have depends on dinner and how well it was eaten.If the kids do not eat dinner at all well there is no dessert.I do like a fresh made dessert.I usually try to make a cake at the begining of the week and it makes it to the end.But I often make different desserts through out the week as well.We had apple crip and banna pudding (with nilla wafers and fresh bannas) this week.If I dont make a fresh dessert that day we can turn to oreos or I often buy the pillsburry pull apart cookies and make just a few each time.

Dessert is nearly every day (for DD only) but it depends on if she's had other sweets during the day AND had a health dinner.
Desserts are usually homemade - including ice cream (I love my ice cream maker). Since we have a small family and only 2 of us eat sweets (the hubster is an alien!!) something like a boxed cake mix made into cupcakes lasts forever. I mix and bake the entire batch and then end up freezing more than half of them. There is almost always something to pull out from the freezer. I do the same with cookie dough!

We don't have dessert every night, but about once a week.
When I am in a hurry for one I put defrosted frozen cream puffs and strawberries alternating on a skewer and drizzle with chocolate. Pretty, quick and yummy!

Dessert is a special treat in this house. Normally it will be brownies, cookies or cheesecake. We do have dessert every Sunday at church too.

Tonight (or tomorrow morning) I'm making a ginger carrot cake because I have a friend coming over Sunday afternoon for tea.
I love carrot cake but the addition of crystallized ginger makes my mouth just drool in anticipation!

Prep Time: 20 minutes
Cook Time: 40 minutes
Ingredients:
- 8- 1 ounce squares of unsweetened chocolate
- 1 cup butter
- 5 eggs
- 3 cups sugar
- 1 tablespoon vanilla
- 1-1/2 cups flour
- 1 teaspoon salt
- 2-1/2 cups chopped pecans or walnuts, toasted
Preparation:
Preheat oven to 375 degrees F. Grease a 9 x 13 pan.
Melt chocolate and butter in a saucepan over low heat; set aside. In a mixer, beat eggs, sugar and vanilla at high speed for 10 minutes**. Blend in chocolate mixture, flour and salt until just mixed. Stir in the nuts. Pour into prepared pan.
Bake for 35-40 minutes. (Don't overbake.) Cool and frost if desired, but that is not necessary.
This is one of the best brownie recipes.
