Rachel Ray's 5 Minute Fudge
The directions are for making it into a wreath, for Christmas giving, but I just make it in a square pan (plus, that would take me more than 5 minutes). I don't use the raisins, cherries or M&Ms. I also either use peanut butter chips or all chocolate chips (milk and semi-sweet combo) instead of butterscotch chips, because that's what I have on hand. Anyway it's super easy and quite tasty. I highly recommend it.
Ingredients
12 ounces semi-sweet chocolate chips
1 cup butterscotch chips
14 ounces sweetened condensed milk (save the can & wrap in saran Wrap)
1 teaspoon pure vanilla extract
8 ounces walnuts, plus more for topping
1/2 cup raisins or fruit
candied red and green cherries or green and red M&M's (like holly)
Directions
1Grease a round cake pan to prevent it from sticking.
2Place your wrapped can in the middle.
3Pour your chips, vanilla and sweetened condensed milk in a pan.
4Heat on low till it melts.
5Add your raisins and walnuts stir till well blended. This will stick to your pan and burn if not stirred consistently.
6Pour your fudge into the cake pan around the can making sure your can stays in the middle of your cake pan.
7Allow the top to stay all bumpy.
8Cut your green candied cherries in half and use the red and green cherries to make holly on the top of the fudge. You can also use the red and green M&M's for the holly. Use a pill splitter to cut the green M&M's in half for the leaves and the red ones I make sure you can see the 'M' on them.
9Place in the fridge till it cools hard and take it out of the pan wrap in cellophane to give as a gift.
This one is so easy for microwave called Fantasy Fudge. Take 1 can of condensed milk ( like Eagle Brand) 18 oz of chocholite chips in a microwavable bowl.melt for about 2 minutes or less, remove from microwave , stir well, add 1 t. vanilla& stir well. You can also add nuts at this time if you like. Line a square baking pan with the real wax paper, pour & spred fudge evenly & refrigerate for about 2 hours. Remove candy from wax paper,it peels off very easily & put on a cutting board. cut into squares. Makes about 50 nice squares. In case you want to make different kinds of candy for christmas go to Northpole.com. They have thousands of candy, cake,Pies etc for free. check it out.![]()
Well you may not believe this one until you try it.
1 package milk chocolate chips
1 can milk chocolate cake icing
Melt the two together until chips are completely melted. (If you use the mircrowave to do this, just start out with little time and stir and then more time if needed - just make sure you don't scorch it).l You might be better melting it in a pan on the stove. It doesn't take very long. Pour in a 8x8 pan which has been buttered. Let sit until cooled or hardened. You can put it in the refrigerator to speed up the process. If you want to add nuts or anything like that, make sure the cho. chips are melted first because you won't be able to tell which are the nuts and which are unmelted chips.
Like I said, you won't be able to believe this until you try it.
