A great idea for both chicken and turkey recipes that you bake in the oven - is to put a generous smear of goat cheese under the skin. Oh, the skin will be crunchy goodness, but the goat cheese seems to help keep the meat so moist and delicious. I actually stuff both whole basil leaves and the goat cheese under the skin, and salt and pepper the outside of the skin. Trust me when I say this is heavenly!!![]()
