Pie Crusts

Does anyone have a fool-proof recipe for pie crusts?  I have been trying to make them for years and to say the least the kitchen gets the worst end of the deal.  I can't tell you how many I've thrown away over the years because they are too hard or they fall apart before I even get them in the pie dish.  Yes, I know I could buy ready-made crusts but then it just doesn't seem like it's homemade to me.

Any advice would be greatly appreciated!

I did find a recipe in the Betty Crocker cook book. My DD and I have used it the last couple years and it hasn't really turned out fantastic but it is homeade. I think you can find it online. Check Betty Crocker.com.

The secret to really great pie crusts that turn out super flakey is to use lard in them, but it's very hard to find. You might ask in your grocery store, some carry it at this time of year. Yes fattening and bad for you, but you will have a pie crust everyone raves about.

Pie crust is so easy!

1 c. flour (I use 1/2 whole wheat pastry flour)
1/4 tsp. salt
4 tbsp. unsalted butter
1/4 c. shortening (I use earth balance sticks)
3 tbsp. ice water
Mix all but the water with a fork until shortening is the size of small peas. Add ice water and mix to pastry consistency. Refrigerate while you mix the filling. Roll on a lightly floured surface.

This is for a savory pie; for a sweet pie, add a tablespoon of sugar

My life saver for the last 40 years is the  MAZOLA  PIE  CRUST

Sift together in PIE pan : 1 1/2 Cup all purpose four

                                             4 1/2  tsp. sugar

                                             1/4  tsp salt

Combine in measuring cup:  1/2 cup cooking oil

                                                      2 tbl milk

Whip with fork.  Pour in center of flour mix in pie pan.  Mix well with fork, press evenly (with fingers) to cover sides and bottom of pan.  Prick bottom with fork many times (so it won't puf up).

Bake 425 F 12 to 15 minutes for a no bake pie or pour in your filling and bake as directed in your recipe.

for a double crust pie:

2 1/2 cups flour

1 cup butter, cold, cut into chunks

1/4 tsp salt

1/2 tsp baking powder

1/2 cup ice water

toss the butter in the flour, salt and baking powder.  Put in bowl of food processor and pulse until crumbly.  Turn machine on and stream in the water, mixing until the dough forms a ball.  Split dough into 2 pieces, flatten and wrap in plastic.  Chill in your fridge for an hour or so.

This is super flaky and the dough rolls out smoothly.
