Brown sugar meatloaf

BROWN SUGAR MEATLOAF
MASHED POTATOES
BUTTERED CORN
DINNER ROLLS

Brown Sugar Meatloaf:

1/2 C packed brown sugar
1/2 C ketchup
1 1/2 lbs lean ground beef
3/4 C milk
2 eggs
1 1/2 tsp salt
1/4 tsp pepper
1 small onion, chopped
1/4 tsp ground ginger
3/4 C finely crushed saltine cracker crumbs (about 10 crackers)

Preheat oven to 350
Lightly grease a 5 x 9 loaf pan
Press the brown sugar into the bottom of pan and spread with ketchup
In a mixing bowl thoroughly mix all remaining ingredients and shape into a loaf
Place loaf on top of ketchup
Bake in a preheated oven for 1 hr or until juices run clear.

Thank you for the recipe. It is unusual.  That seems like a lot of sugar for a main dish, although ham often has a sweet glaze.

It just occurred to me that my mother puts grape jelly on her meatloaf, so maybe the extra sweetener is not as unusual as I'd thought.

It is my husband's favorite dish. If he eats at a restaurant that has meatloaf on the menu, that's what he orders.

That is the recipe I have used for quite some time.

I don't pack the brown sugar on the bottom though.  I pour enough ketchup in to cover the bottom of the pan and then sprinkle with brown sugar.  I don't think I use as much as the recipe calls for.

I also add chopped green bell peppers or onions to it occasionally and Itallian bread crumbs instead of the cracker crumbs.

This sounds good, I'll have to try meatloaf with some brown sugar.
